Grand-mere's Sweet Potato Casserole
serves 8 6 large sweet potatoes 1/4 lb. soft butter 1/2 c. light cream 1/2 c. Madeira wine 1/2 tsp. cinnamon 1/2 tsp. salt 1/2 tsp. nutmeg 1 tbs. grated orange rind 1 tsp. powdered ginger chopped pecans
Preheat oven to 375 degrees. Bake potatoes for 40 minutes or until tender. Reset oven to 350 degrees. Mash potatoes, adding butter, cream, and Madeira wine. Add cinnamon, salt, nutmeg, orange rind, and ginger and place in a buttered baking dish. Dot with butter and sprinkle with pecans. Bake for 25 minutes.
