Unforgettable Pumpkin Soup
4 tbls. butter 1 large onion finely chopped 2 carrots finely chopped 2 cans chicken broth 1 c. water 1 can solid pack pumpkin 1 red apple peeled and chopped 1 tsp. ground ginger 1/4 tsp. nutmeg 1/4 tsp. cinnamon 1 cup heavy cream
Melt butter in a large saucepan. Add onion and carrots. Cook until soft. Add broth, water, pumpkin, apple, ginger, cinnamon and nutmeg. Simmer 30 minutes. Puree soup with handheld or standing blender. Whisk in the cream. Re-heat and serve. Makes 10 cups.
