Chipotle Chicken Casserole
Serves 8-10 2 1 1/2 Lb. Chickens 1/2 cup almonds 1/2 cup raisins 1/2 cup olives 1 clove garlic 2 large cans chopped tomatoes 1 medium can tomato sauce 2 chipotle peppers (in a can) 1 package monterey jack cheese 1 bag plain tortilla chips
Boil chickens until done. Shred chicken and mix with almonds, raisins, and olives. Combine canned tomatoes and sauce with 2 chopped chipotle peppers. Add 3 tbls of chipotle pepper liquid from can and 1 clove of garlic (chopped). Simmer together for 20 minutes. To assemble, in a 2 quart casserole, layer tortilla chips, chicken mixture, then jack cheese and tomato sauce mixture. Repeat layers until filled.
