Chicken Adobo
1 (3 1/2 lb.) frying chicken 1 tsp. peppercorns 1/3 c. cider vinegar 1/4 c. soy sauce 2 cloves garlic minced 1/4 c. oil 1/2 bay leaf
Cut chicken into pieces. Combine chicken, vinegar, soy sauce, garlic, and peppercorns. Add 1/3 c. water and let simmer for 15 minutes. Remove pieces from liquid and fry chicken in oil until brown. Return to liquid and add salt to taste. Let simmer until chicken is tender and liquid is reduced. Serve with rice.
