Beef Stroganoff
Serves 4 1 1/2 pound sirloin steak 2 Tbls fresh lemon juice 1 Small onion, grated 4 Tbls butter 2 Tbls flour 1 Pint sour cream 1/2 Tsp dried basil 1/8 Tsp nutmeg 3 Tbls chopped fresh chives Salt and pepper Steamed rice
Slice meat thinly in diagonal slices across the grain, sprinkle with lemon juice and set aside. Sauté onion in butter, add meat, flour, and seasonings. Cook for several minutes. Stir in sour cream and chives. Serve over hot steamed rice.
